  • 2 cups cooked brown rice
  • 1 tbsp olive oil
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 1 avocado, sliced (optional)
  • fresh cilantro for garnish
  • lime wedges for serving

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced bell pepper and sauté for 3–4 minutes until slightly soft.
  3. Stir in black beans, corn, cumin, paprika, salt, and pepper. Cook for another 4–5 minutes.
  4. Spoon the mixture over warm brown rice.
  5. Top with sliced avocado, fresh cilantro, and a squeeze of lime juice. Serve immediately.

Notes

Swap brown rice with quinoa or cauliflower rice for variety. Add shredded chicken or tofu for extra protein. Adjust spices to taste — chili powder or jalapeños add more heat.
