- Heat olive oil in a skillet over medium heat.
- Add diced bell pepper and sauté for 3–4 minutes until slightly soft.
- Stir in black beans, corn, cumin, paprika, salt, and pepper. Cook for another 4–5 minutes.
- Spoon the mixture over warm brown rice.
- Top with sliced avocado, fresh cilantro, and a squeeze of lime juice. Serve immediately.
Notes
Swap brown rice with quinoa or cauliflower rice for variety. Add shredded chicken or tofu for extra protein. Adjust spices to taste — chili powder or jalapeños add more heat.
