Ingredients
  

Vegetables
  • 2 medium zucchinis
Cheeses and Egg
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Reserve half for topping
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
Sauce
  • 1 cup marinara sauce For layering and topping
Seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Thinly slice the zucchinis lengthwise into strips.
  3. In a bowl, mix ricotta cheese, half of the mozzarella, Parmesan, egg, salt, and pepper until well combined.
Assembly
  1. Spread some marinara sauce on the bottom of a baking dish.
  2. Take a zucchini strip, place a spoonful of the cheese mixture at one end, and roll it up.
  3. Place the rolled zucchini seam-side down in the baking dish.
  4. Repeat with the remaining zucchini strips and filling.
  5. Pour the remaining marinara sauce over the rolled zucchini and sprinkle the remaining mozzarella cheese on top.
Baking
  1. Cover with foil and bake for 25 minutes.
  2. Remove the foil and bake for another 10 minutes or until the cheese is bubbly and golden.
Serving
  1. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place it in the oven until warmed through.
