Preparation
- Preheat the oven to 375°F (190°C).
- Thinly slice the zucchinis lengthwise into strips.
- In a bowl, mix ricotta cheese, half of the mozzarella, Parmesan, egg, salt, and pepper until well combined.
Assembly
- Spread some marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, place a spoonful of the cheese mixture at one end, and roll it up.
- Place the rolled zucchini seam-side down in the baking dish.
- Repeat with the remaining zucchini strips and filling.
- Pour the remaining marinara sauce over the rolled zucchini and sprinkle the remaining mozzarella cheese on top.
Baking
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for another 10 minutes or until the cheese is bubbly and golden.
Serving
- Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place it in the oven until warmed through.
