Ingredients
  

Garlic Butter Spread
  • 1/2 cup unsalted butter, brought to room temperature
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped plus extra for finishing
  • 1/2 teaspoon dried oregano optional
  • a pinch salt
Cheese and Bread
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large loaf of Italian or French bread, halved lengthwise

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper or aluminum foil for easy cleanup.
  2. In a mixing bowl, combine the softened butter with the minced garlic, chopped parsley, oregano (if using), and a small pinch of salt. Stir until mixed into a smooth garlic butter spread.
  3. Lay the bread halves cut-side up on the prepared baking sheet. Spread the garlic butter mixture evenly across the surfaces of both halves.
Baking
  1. Generously scatter the mozzarella cheese over the buttered bread, followed by an even layer of grated Parmesan.
  2. Transfer the baking tray to the oven and bake for approximately 12 to 15 minutes, or until the cheese is fully melted and bubbling.
  3. For a crisp and golden cheese topping, switch the oven setting to broil and toast the bread for an additional 1 to 2 minutes. Keep a close eye to prevent burning.
Serving
  1. Remove from the oven, slice into portions, and serve immediately. Garnish with extra fresh parsley if desired.

Notes

These slices are best served warm and can pair well with soup, salad, or a pasta dish. If you have leftovers, allow them to cool completely before storing in an airtight container in the fridge for up to 3 days. Reheat in the oven or toaster oven.
