Ingredients
  

For the bun mixture
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened Make sure to soften to room temperature for better mixing.
  • 1/2 cup milk Low-fat milk can be used as a substitute.
  • 1 large egg
  • 1 cup strawberries, chopped Fresh strawberries preferred, but frozen can be used if thawed and drained.
For the whipped cream filling
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together the milk and egg, then pour this into your dry ingredients.
  5. Stir until just combined.
  6. Gently fold in the chopped strawberries, being careful not to mash them.
  7. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, leaving space between each for spreading.
Baking
  1. Bake for 15-20 minutes or until golden brown on top.
Whipping and Serving
  1. While the buns are baking, whip the heavy cream, powdered sugar, and vanilla extract in a separate bowl until soft peaks form.
  2. Once the buns have cooled, slice them in half and fill each with the whipped cream.
  3. For an extra treat, top with more fresh strawberries if desired.

Notes

Serve warm or at room temperature. Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days. Reheat slightly if desired.
