  • 2 tablespoons Olive Oil Extra virgin recommended
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Optional
  • 1 cup Feta Cheese Can substitute with goat cheese
  • 2 tablespoons Honey Maple syrup can be used
  • 2 tablespoons Parsley Freshly chopped for garnish

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into uniform ½-inch thick rounds.
  3. In a large mixing bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika; toss to coat.
Cooking
  1. Spread the sweet potato rounds in a single layer on the baking sheet.
  2. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  3. Remove from the oven and let cool for about 5 minutes.
  4. Transfer sweet potato rounds to a serving platter.
  5. Sprinkle crumbled feta cheese over the warm rounds.
  6. Drizzle honey over the feta-topped sweet potato rounds.
  7. Garnish with freshly chopped parsley before serving.

Notes

For extra crispy rounds, soak sweet potato slices in water for 30 minutes before roasting. You can add red pepper flakes for heat or try different herbs like thyme or rosemary.
