Ingredients

Meat
  • 1.5 pounds lean ground beef
Vegetables
  • 2 pieces bell peppers (any color)
  • 0.5 pieces yellow onion
  • 1 clove garlic minced
Cheese
  • 8 ounces sliced provolone cheese
Pasta and Seasoning
  • 2 cups cooked pasta (your choice)
  • Salt and pepper to taste

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat until it’s fully cooked. Once done, drain any excess fat.
  3. Add the chopped bell peppers, diced onion, and minced garlic to the skillet. Cook until the vegetables are softened.
  4. Stir in the cooked pasta and season with salt and pepper according to your taste.
Baking
  1. Transfer the mixture to a greased baking dish and top it off with the sliced provolone cheese.
  2. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden brown.
  3. Let the casserole cool slightly before serving.

Notes

Feel free to add other vegetables like mushrooms or spinach for more nutrition. You can use different types of cheese if you prefer; mozzarella or cheddar also work wonderfully! For a bit of heat, add some red pepper flakes to the beef while cooking. If you'd like a lighter option, consider using shredded rotisserie chicken instead of ground beef.
