  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the peanut butter, sugar, and egg until well combined.
  3. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  4. Flatten each cookie with a fork, creating a criss-cross pattern.
  5. Bake for 10-12 minutes or until the edges are lightly golden.
  6. Allow to cool before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week or freeze for up to three months, separating each cookie with parchment paper. Consider adding chocolate chips, chopped nuts, or cinnamon for variations.
