  • 1 lb smoked sausage sliced
  • 12 oz penne pasta uncooked
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tbsp Cajun seasoning add more for extra kick
  • 1 tsp paprika
  • to taste Salt and pepper
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil for sautéing

  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced sausage, onion, and bell pepper; sauté until browned, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper; bring to a boil.
  5. Stir in uncooked penne pasta; lower heat and simmer until the pasta is tender, about 10-12 minutes, stirring occasionally.
  6. Remove from heat and stir in grated Parmesan cheese until melted.

Notes

This dish is best served hot and can be garnished with extra grated Parmesan cheese or fresh parsley. Pairs beautifully with a simple side salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
