Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the zucchini, bell pepper, red onion, cherry tomatoes, and garlic.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss to coat all the veggies.
- Spread the mixed veggies evenly on a baking sheet.
Cooking
- Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly charred.
- Remove from the oven and top with feta cheese if desired. Serve warm.
Notes
These roasted veggies can be served over quinoa, rice, or greens for a refreshing salad. For added flavor, squeeze lemon juice over the veggies before serving, or add a pinch of red pepper flakes if you love spice. Feel free to mix and match vegetables.
