Main ingredients
  • 1 pound beef (or chicken) Use tender cuts for best results.
  • 2 cups mixed vegetables (carrots, peas, corn) Frozen vegetables can also be used.
  • 1 medium onion (chopped) Chop finely for even cooking.
  • 2 cloves garlic (minced) Adjust according to taste.
  • 4 cups beef or chicken broth Homemade broth recommended for richer flavor.
  • 2 tablespoons olive oil For sautéing the vegetables.
  • Salt and pepper to taste
  • 1 teaspoon thyme Dried or fresh thyme both work.
  • 1 tablespoon Worcestershire sauce Adds depth of flavor.
  • 1 cup rice or pasta (optional) Add during the last 10-15 minutes of cooking if using.
  • Chopped parsley for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the beef or chicken, cooking until browned.
  4. Stir in the mixed vegetables and cook for another 5 minutes.
  5. Pour in the broth and add the thyme, Worcestershire sauce, salt, and pepper. Bring to a boil.
Cooking
  1. Reduce heat and let simmer for 30-40 minutes.
  2. If using rice or pasta, add it during the last 10-15 minutes of cooking.
  3. Taste and adjust seasoning as necessary.
Serving
  1. Serve hot, garnished with chopped parsley.

Notes

For extra flavor, consider using homemade broth if you have it on hand. Feel free to swap in your favorite vegetables or whatever you have in the fridge. If you want a thicker consistency, you can mix a tablespoon of cornstarch with a little cold water and stir it in during the last few minutes of cooking. For a spicier kick, add a dash of hot sauce or some crushed red pepper flakes.
