- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent.
- Add the beef or chicken, cooking until browned.
- Stir in the mixed vegetables and cook for another 5 minutes.
- Pour in the broth and add the thyme, Worcestershire sauce, salt, and pepper. Bring to a boil.
Cooking
- Reduce heat and let simmer for 30-40 minutes.
- If using rice or pasta, add it during the last 10-15 minutes of cooking.
- Taste and adjust seasoning as necessary.
Serving
- Serve hot, garnished with chopped parsley.
Notes
For extra flavor, consider using homemade broth if you have it on hand. Feel free to swap in your favorite vegetables or whatever you have in the fridge. If you want a thicker consistency, you can mix a tablespoon of cornstarch with a little cold water and stir it in during the last few minutes of cooking. For a spicier kick, add a dash of hot sauce or some crushed red pepper flakes.
