Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set this mixture aside.
Mixing
- In a large bowl, use a mixer to cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Add in the eggs, one at a time, mixing well after each addition. Then, stir in the yogurt (or sour cream), mashed bananas, and vanilla extract until well combined.
- Gradually add the dry ingredients into the wet mixture. Stir gently just until no flour streaks remain; be careful not to over mix. Fold in the chopped nuts if you're using them.
Baking
- Pour the batter into the prepared loaf pan. Bake for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze tightly wrapped for up to 3 months. Thaw at room temperature before serving.
