Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour (spooned & leveled)
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
Wet Ingredients
  • ½ cup unsalted butter, softened
  • ¾ cup packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • cup plain yogurt or sour cream, at room temperature
  • 2 cups mashed ripe bananas (about 4 large)
  • 1 tsp pure vanilla extract
Nuts
  • ¾ cup chopped pecans or walnuts

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set this mixture aside.
Mixing
  1. In a large bowl, use a mixer to cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  2. Add in the eggs, one at a time, mixing well after each addition. Then, stir in the yogurt (or sour cream), mashed bananas, and vanilla extract until well combined.
  3. Gradually add the dry ingredients into the wet mixture. Stir gently just until no flour streaks remain; be careful not to over mix. Fold in the chopped nuts if you're using them.
Baking
  1. Pour the batter into the prepared loaf pan. Bake for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Remove from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze tightly wrapped for up to 3 months. Thaw at room temperature before serving.
