  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1/2 cup sugar
  • 2 large eggs Add one at a time to the batter.
  • 1/2 cup milk
  • 1 tablespoon vanilla extract Enhances the flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease mini cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs to the butter mixture, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, mix the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  7. Pour the batter into the prepared mini cake pans, filling each about 2/3 full.
Baking
  1. Bake for 15-20 minutes. Check for doneness with a toothpick.
  2. Allow the cakes to cool before serving.

Notes

For serving, consider a dusting of powdered sugar, whipped cream, or fresh fruit. Store in an airtight container for up to three days at room temperature, or refrigerate for up to a week.
