- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant.
- Add the chicken breasts, season with salt and pepper, and cook until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, pour in the heavy cream and bring to a simmer. Slowly whisk in the Parmesan cheese until the sauce is smooth.
- Add the spiralized zucchini noodles to the sauce and cook for just a few minutes until slightly softened.
- Slice the cooked chicken and add it back to the skillet, tossing it with the sauce and noodles.
- Serve immediately, garnished with parsley if desired.
Notes
To reduce moisture from zoodles, pat them dry with a paper towel after spiralizing. Add extra veggies for more flavor and nutrition. Try shrimp instead of chicken for variation.
