Ingredients
  

Vegetables
  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
Glaze
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • to taste Salt and pepper
  • 1 tablespoon chopped fresh parsley, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
Cooking
  1. Spread the vegetables in a single layer on a baking sheet.
  2. Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
  3. Remove from the oven and transfer to a serving dish.
  4. Garnish with chopped fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave as desired.
