  • 2 cups cooked rice Can use white or brown rice
  • 1 cup cooked chicken, shredded Leftover chicken can be used
  • 1 cup mixed vegetables (carrots, peas, corn) Fresh or frozen can be used
  • 1 medium onion, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until it turns soft and golden.
  3. Stir in the mixed vegetables and cook for about 5 minutes.
  4. Add the shredded chicken and cooked rice to the pan.
  5. Pour in the soy sauce and mix everything well.
  6. Cook for another 5 minutes until everything is heated through.
  7. Season with salt and pepper to taste. Serve hot.

Notes

Serve warm and garnish with fresh herbs like parsley or green onions. Pairs well with a salad or steamed broccoli. Store leftovers in an airtight container in the fridge for up to three days.
