Ingredients
  

  • 1 lb ground turkey or chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1 cup broccoli florets, steamed
  • 1/2 cup shredded carrots
  • 1 tsp paprika
  • salt and pepper to taste
  • 1/2 cup dairy-free shredded cheese (optional)
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and garlic, sauté for 3–4 minutes until fragrant.
  3. Stir in ground turkey or chicken, season with paprika, salt, and pepper. Cook until browned.
  4. Add in cooked quinoa, steamed broccoli, and shredded carrots. Mix well and cook for 2–3 minutes.
  5. Sprinkle with dairy-free cheese if using, cover, and let melt for a few minutes. Garnish with parsley and serve warm.

Notes

You can swap ground turkey with chicken, beef, or plant-based crumbles. Add bell peppers or spinach for extra veggies. Serve with a side salad for a complete gluten-free dinner.
