Ingredients
  

Dry Ingredients
  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk (or dairy-free alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or oil)
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
  3. Combine the wet ingredients with the dry ingredients, stirring until just mixed. Be careful not to over-mix; a few lumps are okay!
Cooking
  1. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake onto the skillet.
  2. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serving
  1. Serve warm with your favorite toppings like maple syrup, fresh fruits, or yogurt.

Notes

Don’t over-mix the batter. A few lumps are just fine! Keep the skillet at the right temperature for best results. Experiment with add-ins like chocolate chips or nuts.
