Ingredients
  

  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried dill (or fresh, chopped)
  • salt and pepper to taste
  • 1 cup asparagus spears, trimmed
  • 1 cup baby potatoes, halved

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. In a small bowl, mix olive oil, lemon zest, lemon juice, garlic, dill, salt, and pepper.
  3. Place salmon fillets, asparagus, and potatoes on the baking sheet.
  4. Drizzle the lemon-dill mixture evenly over everything.
  5. Roast for 20 minutes, until salmon flakes easily and vegetables are tender. Serve warm.

Notes

You can swap salmon for cod or chicken breasts. Try using sweet potatoes instead of baby potatoes for extra fiber. Add cherry tomatoes for a burst of color and freshness.
