Ingredients
  

Dry Ingredients
  • 1.5 cups gluten-free flour blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 0.25 cups molasses
  • 0.5 cups chopped crystallized ginger (optional) Add for extra ginger flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix the gluten-free flour, baking powder, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the softened butter and brown sugar.
  4. Beat in the eggs, then add the applesauce and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If desired, fold in the chopped crystallized ginger.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm, optionally with whipped cream or ice cream. Dust with powdered sugar or drizzle honey for extra sweetness. Store in an airtight container for 3 days at room temperature or refrigerate for up to a week.
