  • 1 piece egg
  • 1/2 tsp baking powder
  • 1/2 tsp mixed spice powder Can be replaced with other flavors like cocoa or citrus zest.
  • Icing sugar for icing Mix with water to achieve desired consistency.
  • Jam for yolk Use any type of jam for a colorful presentation.

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the gluten free flour, baking powder, and mixed spice powder.
  3. In another bowl, cream the softened butter and sugar together until fluffy.
  4. Beat in the egg until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until everything is mixed together.
  6. Roll out the dough on a floured surface and cut into egg shapes using a cookie cutter.
  7. Place the shaped dough onto a lined baking tray and bake for 10-12 minutes, or until golden.
  8. Allow the biscuits to cool, then top with icing and add a dollop of jam for the 'yolk.'

Notes
