Ingredients
  

For the Chicken Nuggets
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup ground almonds (or almond flour)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Cooking oil (for frying)

Method
 

Preparation
  1. Set up your breading station by beating the eggs in one bowl.
  2. In another bowl, mix gluten-free breadcrumbs, ground almonds, garlic powder, onion powder, salt, and pepper.
  3. Dip each piece of chicken into the egg, letting any excess drip off.
  4. Roll the chicken in the breadcrumb mixture until well coated.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Once hot, carefully add the chicken pieces in batches, cooking until golden brown and cooked through, about 4-5 minutes on each side.
  3. Remove the chicken nuggets and let them cool on a paper towel.

Notes

Serve these chicken nuggets with dipping sauce like honey mustard or barbecue, and store leftovers in an airtight container in the fridge for up to three days.
