Preparation
- Set up your breading station by beating the eggs in one bowl.
- In another bowl, mix gluten-free breadcrumbs, ground almonds, garlic powder, onion powder, salt, and pepper.
- Dip each piece of chicken into the egg, letting any excess drip off.
- Roll the chicken in the breadcrumb mixture until well coated.
Cooking
- Heat oil in a frying pan over medium heat.
- Once hot, carefully add the chicken pieces in batches, cooking until golden brown and cooked through, about 4-5 minutes on each side.
- Remove the chicken nuggets and let them cool on a paper towel.

Serve these chicken nuggets with dipping sauce like honey mustard or barbecue, and store leftovers in an airtight container in the fridge for up to three days.
