Potato Ingredients
  • 4 large potatoes Russet or sweet potatoes can be used.
Seasoning and Coating
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced Fresh garlic is preferred.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs Optional
  • Fresh parsley for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into wedges.
  3. In a large bowl, combine olive oil, minced garlic, salt, pepper, and Italian herbs if using.
  4. Add the potato wedges to the bowl and toss until they are evenly coated.
  5. Spread the wedges in a single layer on a baking sheet.
  6. Sprinkle the grated Parmesan cheese over the top.
Baking
  1. Bake for 30-35 minutes or until they are golden brown and crispy, flipping halfway through.
Serving
  1. Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

For extra crunch, soak the potato wedges in cold water for 30 minutes before baking. You can customize the spices by adding paprika or cayenne pepper for different flavors. Use fresh garlic for the best taste, but jarred minced garlic will suffice.
