Ingredients
  

For the Chicken Marinade
  • 1 cup buttermilk Can be substituted with milk
  • 1 teaspoon paprika Adds flavor and color
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large chicken breasts Boneless and skinless
For the French Toast
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 8 slices thick-cut bread Challah or brioche recommended
  • 2 tablespoons butter For cooking the French toast
For the Chicken Breading
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
For Serving
  • to taste Maple syrup For serving
  • to taste Powdered sugar For garnish
  • to taste Fresh fruit Such as strawberries or blueberries

Method
 

Marinating the Chicken
  1. In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and let them marinate in the fridge for at least 30 minutes.
Preparing the French Toast
  1. In another bowl, whisk together the eggs, milk, and vanilla extract. Dip each slice of bread in the mixture, ensuring every side is well-coated.
Cooking the Chicken
  1. In one shallow dish, place the flour, and in another, put the breadcrumbs. Take the marinated chicken out of the fridge and dredge it first in the flour, then in the breadcrumbs.
  2. Heat a frying pan over medium heat and add a little oil. Fry the chicken until golden brown and fully cooked, about 6-7 minutes per side.
Assembling the Sandwich
  1. In the same pan, melt the butter and cook the French toast slices until golden brown on each side.
  2. Layer two slices of French toast, add a piece of fried chicken in between, and top with another slice of French toast.
Serving
  1. Drizzle with maple syrup, sprinkle with powdered sugar, and add some fresh fruit and a dollop of whipped cream on the side for a delightful finish.

Notes

Use thick-cut bread for an extra fluffy texture; challah or brioche are great choices. Feel free to customize the spices in the chicken marinade according to your taste preferences. Make sure your oil is hot enough before frying the chicken to get a beautiful crispy crust.
