Preparation and Cooking
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into small cubes.
- Boil the sweet potatoes in a large pot for about 15-20 minutes, or until they are tender.
- Drain the sweet potatoes and return them to the pot.
- Add the brown sugar, butter, milk, vanilla extract, cinnamon, and nutmeg.
- Mash everything together until smooth and creamy.
- Transfer the sweet potato mixture to a greased baking dish.
- If desired, sprinkle mini marshmallows on top.
- Bake for 25-30 minutes, or until the marshmallows are golden and melty.
Notes
This casserole pairs well with roasted turkey, baked ham, or grilled chicken. Store leftovers covered in the fridge for up to 3 days.
