  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup mini marshmallows (optional) Optional topping

Method
 

Preparation and Cooking
  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into small cubes.
  3. Boil the sweet potatoes in a large pot for about 15-20 minutes, or until they are tender.
  4. Drain the sweet potatoes and return them to the pot.
  5. Add the brown sugar, butter, milk, vanilla extract, cinnamon, and nutmeg.
  6. Mash everything together until smooth and creamy.
  7. Transfer the sweet potato mixture to a greased baking dish.
  8. If desired, sprinkle mini marshmallows on top.
  9. Bake for 25-30 minutes, or until the marshmallows are golden and melty.

Notes

This casserole pairs well with roasted turkey, baked ham, or grilled chicken. Store leftovers covered in the fridge for up to 3 days.
