Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation
  1. Begin by cooking your pasta according to the package instructions. Drain and set aside.
  2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, fresh spinach, and grated cheese.

  1. Drizzle the olive oil over the mixture and sprinkle the garlic powder, salt, and pepper.
  2. Toss everything together until well combined and the spinach begins to wilt slightly.
Serving
  1. Serve immediately, or if you prefer, transfer to a baking dish and bake at 350°F for 15-20 minutes for a cheesy casserole.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the microwave for a couple of minutes, adding olive oil or water if needed. Variations can include different cheese or pasta types, adding olives or artichokes for a Mediterranean flavor.
