Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 tsp dried oregano
  • 1/2 cup shredded mozzarella cheese (optional)
  • fresh basil for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place the chicken breasts on a baking sheet and drizzle with olive oil.
  3. Season with garlic powder, onion powder, salt, pepper, and oregano.
  4. Scatter the cherry tomatoes, zucchini, and bell pepper around the chicken.
  5. Bake for 20–25 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Optional: Sprinkle shredded mozzarella over the chicken and return to the oven for 5 minutes to melt.
  7. Garnish with fresh basil and serve warm.

Notes

For added flavor, drizzle with balsamic glaze or squeeze fresh lemon juice before serving. You can swap chicken with salmon or tofu for a different protein. Pair with rice, quinoa, or a fresh green salad to make it a complete meal.
