Ingredients
  

For the filling
  • 2 cups Shredded Chicken
  • 1/2 cup Diced Bell Pepper
  • 1/3 cup Diced Red Onion
  • 1/4 cup Mayo (e.g., Primal Kitchen avocado oil mayo)
  • 3 tablespoons Lime Juice (Fresh squeezed)
  • 2 tablespoons Chopped Cilantro
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
For the taquitos
  • 8 pieces Cassava Flour Tortillas (e.g., Siete Foods, Rise & Puff)

Method
 

Preparation
  1. Add all filling ingredients into a large bowl. Mix well with a stiff spatula or spoon.
  2. Warm up two tortillas at a time on a damp paper towel in the microwave for 15-20 seconds.
Cooking
  1. Preheat a cast iron or nonstick skillet on medium heat. Spray with avocado oil or olive oil to prevent sticking.
  2. Fill each warm tortilla with a spoonful of chicken filling and tightly roll it up.
  3. Place the rolled taquitos in the skillet. Cook for about 5 minutes until golden brown, then flip them and cook for another 4-5 minutes.
Serving
  1. Serve taquitos on a bed of fresh romaine lettuce with guacamole and salsa.

Notes

To store leftovers, cool completely and place in an airtight container in the fridge for 2-3 days. Reheat in the oven for best crispness.
