  • 2 pieces chicken breasts, thinly sliced
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • to taste salt and pepper
  • as needed cooked rice or noodles for serving

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Toss in the sliced chicken breasts and cook until they are golden brown, about 5-7 minutes.
  4. Add the mixed vegetables and stir well.
  5. Pour in the soy sauce, stirring to coat everything evenly.
  6. Cook for another 3-4 minutes until the veggies are tender-crisp.
  7. Season with salt and pepper to taste.

Notes

Serve over rice or toss with noodles. Garnish with sesame seeds or fresh herbs to elevate the dish. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water to maintain moisture.
