Ingredients
  

For the Chicken
  • 1.25 lbs Chicken breast (diced small)
  • 1.75 tsp sweet smoked paprika
  • 1.5 tsp oregano
  • 1.5 tsp garlic powder
  • 0.5 tsp thyme
  • 0.5 tsp black pepper
  • 0.5 tsp salt
For the Alfredo Sauce
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 2 cup chicken broth
  • 1.67 tbsp gluten free 1:1 flour
  • 2 cup dairy free heavy cream
  • 2 cup chopped spinach
  • 8 oz dairy free parmesan (shredded)
  • 2 tbsp pasta water (as needed) Add as needed for consistency.

Method
 

Cooking Pasta
  1. Boil the pasta in a large pot of water according to the package directions for al dente. Drain and set aside, reserving a bit of the pasta water.
Preparing Chicken
  1. Add the chicken and chicken seasonings to a small bowl and toss to thoroughly coat the chicken.
  2. Heat olive oil over medium heat in a large skillet. Sear the chicken for 3 to 4 minutes on each side until its internal temperature reaches 165 degrees. Transfer the chicken to a plate.
Making the Sauce
  1. Add the dairy-free butter to the same skillet and let it melt. Then, add all the sauce seasonings, and simmer them for about a minute.
  2. Add the gluten-free flour to the skillet and mix well, scraping the bottom of the skillet.
  3. Pour in the chicken broth and dairy-free heavy cream, then add the spinach and whisk well. Simmer while whisking for 3 to 4 minutes until the sauce is rich and creamy.
  4. Stir in the dairy-free parmesan cheese until completely melted. Continue cooking, stirring occasionally, until the sauce reaches your desired thickness.
Final Assembly
  1. Add the pasta to the sauce and toss to coat evenly. If necessary, add a tablespoon of pasta water to thin the sauce.
  2. Gently stir in the chicken to make sure everything is coated.
  3. Serve this creamy dish warm on a nice plate with a sprinkle of additional dairy-free parmesan on top.

Notes

Make sure to properly season your chicken for a flavor boost. Don’t skip on reserving the pasta water; it’s key for adjusting the sauce's consistency. Feel free to add other veggies, like broccoli or zucchini, to customize your dish!
