  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Preparation
  1. In a large pot, cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until it wilts, stirring occasionally.
Cooking
  1. Pour in the heavy cream and bring the mixture to a gentle simmer, allowing it to thicken slightly.
  2. Stir in the cooked gnocchi and crumbled feta cheese, mixing until everything is well combined.
  3. Season with salt and pepper to taste, adjusting as needed.
Serving
  1. Serve warm, topped with Parmesan cheese if desired.

Notes

This dish is best enjoyed fresh from the skillet. Store leftovers in an airtight container in the fridge for up to three days. Add a splash of cream or water when reheating for best texture.
