- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chicken breasts, cooking until browned on both sides.
- Pour in the chicken broth and bring it to a boil. Add the ramen noodles and cook according to package instructions.
- Once the noodles are cooked, stir in the heavy cream and soy sauce.
- Add the fresh vegetables and cook until just wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat on the stove over low heat, adding a splash of chicken broth or water to loosen it up. For a spicier kick, add red pepper flakes while sautéing the garlic.
