  • 2 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth Or vegetable broth for a vegetarian option
  • 2 servings ramen noodles Can substitute with udon or soba noodles
Creamy Ingredients
  • 1/2 cup heavy cream For a creamier texture, use more cream
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
Vegetables and Seasoning
  • 1 cup fresh vegetables (e.g., spinach, carrots, bell peppers) Feel free to swap with other veggies like broccoli or snap peas

  • Green onions for garnish Chopped for serving

Method

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the chicken breasts, cooking until browned on both sides.
  3. Pour in the chicken broth and bring it to a boil. Add the ramen noodles and cook according to package instructions.
  4. Once the noodles are cooked, stir in the heavy cream and soy sauce.
  5. Add the fresh vegetables and cook until just wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat on the stove over low heat, adding a splash of chicken broth or water to loosen it up. For a spicier kick, add red pepper flakes while sautéing the garlic.
