- In a large pan, heat the olive oil over medium heat.
- Add the minced garlic, and sauté until fragrant, about 1 minute.
- Stir in the cooked chicken and cook for another 2-3 minutes.
- Add the halved cherry tomatoes and spinach, and cook until the spinach wilts and the tomatoes soften.
- Season the mixture with salt and pepper to taste.
- Mix in the cooked pasta, stirring to combine all the ingredients evenly.
- Remove from heat and stir in the grated cheese until melted and gooey.
- Garnish with fresh herbs if desired, and serve warm.
Notes
Serve warm, paired with a side salad or garlic bread. Great for lunch or dinner. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat before serving.
