  • 2 cups cooked pasta (any type you like) Freshly cooked pasta is recommended for best texture.
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves Can be substituted with frozen spinach (thaw and drain).
  • 1 cup cooked, shredded chicken (or plant-based alternative) Leftover chicken or turkey works well.
  • 1 cup grated cheese (mozzarella or your favorite) Add a splash of heavy cream or cream cheese for a creamier dish.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: Fresh herbs (basil or parsley), for garnish

Method
 

Cooking
  1. In a large pan, heat the olive oil over medium heat.
  2. Add the minced garlic, and sauté until fragrant, about 1 minute.
  3. Stir in the cooked chicken and cook for another 2-3 minutes.
  4. Add the halved cherry tomatoes and spinach, and cook until the spinach wilts and the tomatoes soften.
  5. Season the mixture with salt and pepper to taste.
  6. Mix in the cooked pasta, stirring to combine all the ingredients evenly.
  7. Remove from heat and stir in the grated cheese until melted and gooey.
  8. Garnish with fresh herbs if desired, and serve warm.

Notes

Serve warm, paired with a side salad or garlic bread. Great for lunch or dinner. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat before serving.
