- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the ground beef, bread crumbs, chopped onion, BBQ sauce, salt, and pepper.
- Press the mixture into a loaf shape and place it in a baking dish.
- In another bowl, layer the sliced potatoes on top of the meatloaf.
- Pour milk over the potatoes and sprinkle with cheese if desired.
- Cover the dish with foil and bake for 1 hour.
- Remove the foil and bake for an additional 20 minutes or until the potatoes are tender and the meatloaf is cooked through.
- Let it cool slightly before serving.
