Ingredients
  

For the Meatloaf
  • 1 lb Ground beef
  • 1/3 cup Bread crumbs
  • 1/2 large Onion, chopped
  • 1/4 cup BBQ sauce
  • Salt and pepper to taste
For the Casserole
  • 4 medium Potatoes, peeled and sliced
  • 1 cup Shredded cheese (optional) Feel free to swap out with your favorite blend or omit for a lighter version.
  • 1 cup Milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground beef, bread crumbs, chopped onion, BBQ sauce, salt, and pepper.
  3. Press the mixture into a loaf shape and place it in a baking dish.
  4. In another bowl, layer the sliced potatoes on top of the meatloaf.
  5. Pour milk over the potatoes and sprinkle with cheese if desired.
  6. Cover the dish with foil and bake for 1 hour.
  7. Remove the foil and bake for an additional 20 minutes or until the potatoes are tender and the meatloaf is cooked through.
  8. Let it cool slightly before serving.

Notes

This dish stores beautifully! Once it has cooled, cover it tightly and keep it in the refrigerator for up to 3 days. For longer storage, freeze individual portions in airtight containers. Tips to enhance flavor: add chopped garlic or bell peppers to the meatloaf mixture, or a dash of hot sauce to the BBQ sauce. Customize with different vegetables or swap out the ground beef for turkey or chicken.
