Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix the light brown sugar, white sugar, and ground cinnamon.
- In another bowl, cream the softened butter and the sugar mixture until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped apples.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Slice the bread and serve it warm or at room temperature, optionally with butter or ice cream. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
