For the batter
  • 1/3 cup light brown sugar
  • 2/3 cup white sugar
  • 1/2 cup butter, softened Ensure it is soft for easy blending.
  • 2 pieces eggs Beaten in one at a time.
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 cups diced apples Firm apples like Granny Smith work best.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream together the butter, light brown sugar, and white sugar until smooth.
  3. Beat in the eggs, one at a time.
  4. In another bowl, combine the flour, baking powder, salt, and ground cinnamon.
  5. Gradually add the flour mixture to the creamed mixture alternately with the milk.
  6. Fold in the diced apples.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Enjoy warm, sliced thick with butter. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
