For the Crust
  • 1 cup cottage cheese Use low-fat or regular as preferred.
  • 2 large eggs
  • 3/4 cup almond flour Can substitute with all-purpose flour.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese, eggs, garlic powder, Italian seasoning, salt, and black pepper.
  3. Gradually add the almond flour while mixing until you form a thick batter.
  4. Spread the batter evenly onto the parchment-lined pan, shaping it into a circle.
Baking
  1. Bake for 20-25 minutes or until the crust is firm and golden.
  2. Remove from the oven, add your desired toppings, and return to bake if needed.

Notes

For an extra protein boost, mix in some shredded chicken or turkey into the batter. Experiment with different seasonings or cheeses to suit your taste. Make sure to spread the batter evenly for a perfect bake!
