Cookie Monster Cinnamon Rolls

Ingredients
  

For the Dough
  • ¾ cup warm milk (110°F) Ensure milk is warm, not hot.
  • tsp active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • ¼ cup unsalted butter, melted
  • 3 cups all-purpose flour Additional flour may be needed for rolling.
  • ½ tsp salt
  • 1 tsp vanilla extract
For the Filling
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 tbsp ground cinnamon
  • ½ cup crushed chocolate sandwich cookies (like Oreo)
  • ¼ cup mini chocolate chips
For the Icing
  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 2–3 tbsp milk Adjust for consistency.
  • ½ cup crushed chocolate cookies For topping.
  • Extra mini chocolate chips Optional for topping.

Method
 

Make the Dough
  1. In a bowl, combine warm milk and yeast. Let it sit for 5 minutes until foamy.
  2. Stir in the sugar, egg, yolk, melted butter, and vanilla.
  3. Gradually add 2 cups of flour and salt. Mix well, then slowly add the remaining flour.
  4. Add blue food coloring and knead until smooth and evenly colored.
  5. Transfer to a greased bowl, cover, and let rise for 1–1½ hours.
Make the Filling
  1. In another bowl, mix the softened butter, brown sugar, and cinnamon.
  2. Stir in crushed cookies and chocolate chips until well combined.
Roll & Fill
  1. On a floured surface, roll the dough into a 14×9-inch rectangle.
  2. Evenly spread the filling over the surface.
  3. Roll it tightly from the long side and slice into 12 rolls.
Second Rise & Bake
  1. Place the rolls in a greased 9×13-inch dish. Cover and let rise for 30–45 minutes.
  2. Preheat the oven to 350°F.
  3. Bake for 20–25 minutes until golden brown.
Make Icing
  1. In a mixing bowl, beat the cream cheese and softened butter until smooth.
  2. Add powdered sugar, vanilla, and milk. Mix until creamy.
Assemble & Serve
  1. Drizzle the icing over the warm rolls.
  2. Sprinkle with crushed cookies and extra mini chocolate chips if desired.
  3. Serve warm and enjoy!

Notes

These rolls are best enjoyed fresh out of the oven while they’re warm and gooey. Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Reheat in the microwave to revive their warmth.
