  • 2 cups pasta (your choice, like penne or fusilli)
Vegetable Ingredients
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 cloves garlic, minced
Cheese and Flavoring
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup olive oil
  • to taste salt and pepper
Garnish
  • to taste fresh basil leaves for garnish (optional)

Method
 

Cooking Pasta
  1. Begin by cooking the pasta according to the package instructions. Once ready, drain and set aside.
Sautéing Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes, until they start to soften.
  3. Stir in the fresh spinach and cook until wilted.
Combining Ingredients
  1. Pour the cooked pasta into the skillet and mix well. Add the cubed mozzarella cheese, salt, and pepper. Toss until everything is combined and the mozzarella starts to melt.
  2. Remove from heat and serve immediately, garnished with fresh basil if desired.

Notes

For extra flavor, feel free to add a sprinkle of your favorite Italian herbs while cooking. Use whole grain pasta for a healthier option. Experiment with different veggies, like bell peppers or zucchini, to change it up! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Just reheat in the microwave or on the stove until warmed through.
