Cooking Pasta
- Begin by cooking the pasta according to the package instructions. Once ready, drain and set aside.
Sautéing Vegetables
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes, until they start to soften.
- Stir in the fresh spinach and cook until wilted.
Combining Ingredients
- Pour the cooked pasta into the skillet and mix well. Add the cubed mozzarella cheese, salt, and pepper. Toss until everything is combined and the mozzarella starts to melt.
- Remove from heat and serve immediately, garnished with fresh basil if desired.
Notes
For extra flavor, feel free to add a sprinkle of your favorite Italian herbs while cooking. Use whole grain pasta for a healthier option. Experiment with different veggies, like bell peppers or zucchini, to change it up! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Just reheat in the microwave or on the stove until warmed through.
