  • 1/2 cup peanut butter Can use almond butter or sunbutter as alternatives.
  • 3 tablespoons soft butter Ensure butter is soft but not melted.
  • 1 teaspoon vanilla
  • 1 cup Rice Krispies
For the chocolate coating
  • 1 cup chocolate chips Can experiment with dark or white chocolate.

Method
 

Preparation
  1. In a large mixing bowl, combine the peanut butter, soft butter, and vanilla. Mix until smooth.
  2. Add the Rice Krispies and stir until they are well coated.
  3. Let the mixture cool slightly, then form it into small balls.
Chocolate coating
  1. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Dip each ball into the melted chocolate, allowing any excess to drip off.
  3. Place the chocolate-covered balls on a parchment-lined tray and refrigerate until set.

Notes

These can be served as snacks at parties or as simple desserts. Store them in an airtight container in the refrigerator for about a week, or freeze with parchment paper between layers to prevent sticking. For added fun, you can mix in mini marshmallows or roll the balls in crushed nuts or coconut after dipping them in chocolate.
