Flatbread Ingredients
  • 1 cup chickpea flour Also known as gram flour.
  • 3/4 cup water Adjust as needed for batter consistency.
  • 1/2 cup chopped spinach Freshly chopped.
  • 1/2 tsp salt To taste.
  • 1/2 tsp black pepper To taste.
  • 1/2 tsp garlic powder Can substitute with fresh garlic.
  • 1/2 tsp cumin Adds flavor.
  • 1 tbsp olive oil For greasing and flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a medium-sized mixing bowl, combine chickpea flour, water, salt, black pepper, garlic powder, and cumin. Whisk until smooth and lump-free.
  3. Stir in the chopped spinach until evenly distributed.
Baking
  1. Pour the batter into the greased dish and spread it evenly. Drizzle olive oil on top.
  2. Bake for 20-25 minutes until the edges are golden brown and firm to touch.
Cooling
  1. Allow the flatbread to cool for a few minutes before slicing into squares or wedges.

Notes

Great served with hummus or yogurt dip. Can also be used as a base for wraps. Store leftovers in an airtight container for up to three days.
