Ingredients
  

Chicken and Sauce
  • 1 pound chicken breast, sliced into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
Vegetables
  • 2 cups mixed vegetables (like bell peppers, carrots, and broccoli)
  • 2 cloves garlic, minced
  • 1 inch piece ginger, minced
Cooking
  • 1 tablespoon olive oil
For Serving
  • as needed cooked rice or noodles for serving

Method
 

Preparation
  1. In a bowl, combine the soy sauce, honey, and sesame oil. Mix well and set aside.
  2. If desired, marinate the chicken in the soy sauce mixture for at least 30 minutes before cooking.
Cooking
  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced chicken to the pan. Cook for about 5-7 minutes or until the chicken is browned and cooked through.
  4. Stir in the mixed vegetables and pour the sauce over the chicken and veggies. Cook for an additional 3-5 minutes until the vegetables are tender-crisp.
Serving
  1. Serve hot over cooked rice or noodles.

Notes

This chicken stir-fry is best enjoyed right after it’s made! Garnish with chopped green onions or sesame seeds for extra color. You can swap out the vegetables based on preference, and for an extra kick, add red pepper flakes or diced chili peppers while cooking.
