- In a bowl, mix the shredded chicken with the mashed avocado, and season with salt and pepper.
- Spread the mixture onto one slice of bread, top with shredded cheese, and place another slice of bread on top.
Cooking
- Heat a skillet over medium heat and add a little butter.
- Place the sandwich in the skillet and grill on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from skillet, slice, and serve warm.
Notes
For added flavor, feel free to add spices or herbs to the chicken and avocado mixture. Store leftovers in an airtight container in the fridge. Reheat in a skillet or microwave to maintain gooeyness.
