- Heat the olive oil in a large skillet over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced chicken to the skillet and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
- Once the chicken is cooked, add the mixed bell peppers and broccoli florets. Stir-fry for another 5 minutes until the vegetables are tender but still crisp.
- Pour the soy sauce over the stir-fry and mix well. Cook for an additional minute.
- Serve hot over cooked rice or noodles.
Notes
For added flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking. Feel free to toss in any vegetables you have on hand, like snap peas, carrots, or bok choy. If you enjoy some heat, you can add a pinch of red pepper flakes or a splash of sriracha sauce to spice things up. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
