Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (your choice)
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots) Feel free to use any vegetables you like.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon dried Italian herbs (optional)
Cheese
  • 1 cup shredded cheese (mozzarella or cheddar) You can experiment with different cheese types.

Method
 

Cooking Pasta
  1. In a large pot, bring water to a boil. Add a pinch of salt and cook the pasta according to package directions until al dente. Drain and set aside.
Sautéing Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and mixed vegetables. Sauté for about 5-7 minutes or until the vegetables are tender.
Combining Ingredients
  1. Add the cooked pasta to the skillet with the sautéed vegetables. Stir to combine everything well.
Adding Cheese
  1. Sprinkle shredded cheese on top. Stir until the cheese melts and everything is coated evenly. Season with salt, pepper, and Italian herbs, if using.
Serving
  1. Once the cheese has melted and everything looks delicious, remove from heat and serve immediately!

Notes

Serve hot, garnished with fresh herbs or extra cheese if desired. Pair with a fresh green salad or garlic bread. If storing leftovers, let the pasta cool before transferring to an airtight container. Store in the refrigerator for up to 3 days.
