Method
Cooking Pasta
- In a large pot, bring water to a boil. Add a pinch of salt and cook the pasta according to package directions until al dente. Drain and set aside.
Sautéing Vegetables
- In a large skillet, heat olive oil over medium heat. Add minced garlic and mixed vegetables. Sauté for about 5-7 minutes or until the vegetables are tender.
Combining Ingredients
- Add the cooked pasta to the skillet with the sautéed vegetables. Stir to combine everything well.
Adding Cheese
- Sprinkle shredded cheese on top. Stir until the cheese melts and everything is coated evenly. Season with salt, pepper, and Italian herbs, if using.
Serving
- Once the cheese has melted and everything looks delicious, remove from heat and serve immediately!
Notes
Serve hot, garnished with fresh herbs or extra cheese if desired. Pair with a fresh green salad or garlic bread. If storing leftovers, let the pasta cool before transferring to an airtight container. Store in the refrigerator for up to 3 days.
