Dough Ingredients
  • 2 cups sourdough starter Make sure it's active and bubbly.
  • 4 cups all-purpose flour You can substitute with whole wheat flour, but may need extra water.
  • 1/4 cup olive oil Consider infusing with herbs for added flavor.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1 teaspoon salt Can sprinkle sea salt on top before baking.
  • 1 cup shredded cheese (mozzarella or parmesan) Feel free to experiment with different types of cheese.
  • 1 tablespoon fresh herbs (optional) Rosemary or thyme work well.
  • 1 cup warm water Ensure the water is warm but not hot.

Method
 

Preparation
  1. In a large bowl, combine the sourdough starter, warm water, and olive oil. Stir until well mixed.
  2. Add the flour, minced garlic, salt, and herbs (if using) to the mixture. Stir until a dough forms.
  3. Knead the dough for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 2-3 hours or until doubled in size.
Baking
  1. Preheat your oven to 425°F (220°C).
  2. Punch down the risen dough and spread it out on a greased baking sheet.
  3. Use your fingers to create dimples across the surface of the dough, then sprinkle the cheese over the top.
  4. Let the dough rest for another 30 minutes before baking.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown.
  6. Remove from the oven, let cool slightly, and serve warm.

Notes

To store, place in an airtight container at room temperature for up to 2 days. Freeze for longer storage, thaw and reheat before serving. For added flavor, drizzle olive oil and sprinkle herbs before serving.
