Ingredients
  

For the caramel
  • 1 cup 1 cup (8oz/225g) sugar for the caramel
  • 3 tablespoons 3 tablespoons water
For the custard
  • 2 cups 2 cups (16floz/450ml) heavy cream
  • 1 cup 1 cup (8floz/225ml) milk
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cup 1 cup (8oz/225g) sugar for the custard
  • 3 large 3 egg yolks
  • 2 large 2 eggs
  • 1/8 teaspoon 1/8 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine 1 cup of sugar and 3 tablespoons of water over medium heat. Cook until the sugar turns caramelized and golden brown. Quickly pour this mixture into the bottom of a round baking dish, tilting it to coat evenly.
  3. In a separate bowl, whisk together the heavy cream, milk, vanilla extract, 1 cup of sugar, egg yolks, eggs, and salt until well blended.
  4. Pour the custard mixture over the caramel in the baking dish.
  5. Place the baking dish in a larger baking pan filled with hot water (this water bath will help the custard cook evenly).
Baking
  1. Bake for about 50-60 minutes, or until set in the center.
  2. Once done, let it cool before refrigerating for a few hours.
Serving
  1. To serve, run a knife around the edge of the flan, carefully invert it onto a plate, and enjoy!

Notes

Make sure to watch the sugar closely when making the caramel; it can burn quickly. For a smoother texture, strain the custard mixture before pouring it into the baking dish. If you prefer a sweeter flan, feel free to adjust the amount of sugar in the custard.
