Ingredients
  

Pasta Ingredients
  • 8 oz pasta (penne or fusilli)
Sausage and Vegetables
  • 1 lb smoked sausage, sliced
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp Cajun seasoning
Cream and Garnish
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • to taste Salt and pepper
  • Olive oil
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking the Sausage and Vegetables
  1. In a large pot, heat some olive oil over medium heat.
  2. Add the sliced sausage and cook until browned, about 5 minutes.
  3. Add the chopped onion and bell pepper; cook until softened, about 3-4 minutes.
  4. Stir in the garlic and Cajun seasoning, cooking for another minute.
Cooking the Pasta
  1. Add the pasta and enough water to cover it.
  2. Bring to a boil, then reduce heat and simmer until the pasta is al dente, about 10-12 minutes.
Finishing the Dish
  1. Stir in the heavy cream and cheese until melted and creamy.
  2. Season with salt and pepper to taste.
  3. Garnish with chopped parsley and serve hot.

Notes

This dish is best served warm. Pair it with a simple green salad and crusty bread for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of cream or water to restore creaminess.
