  • 1 lb Smoked sausage Sliced
  • 1 cup Rice White or brown
  • 2 medium Bell peppers Chopped
  • 2 tablespoons Cajun seasoning Adjust to taste
  • 1 large Onion Diced
  • 2 cloves Garlic Minced
  • 3 cups Chicken broth For cooking the rice
  • 2 tablespoons Olive oil For sautéing

Method
 

Cooking Steps
  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, and sauté until fragrant.
  3. Add sliced smoked sausage and cook until browned.
  4. Stir in chopped bell peppers and cook until softened.
  5. Add rice and Cajun seasoning, stirring to combine.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
  8. Fluff with a fork and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This dish freezes well for up to 3 months.
