Preparation and Marination
- In a bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, cover, and let them marinate in the refrigerator for at least 1 hour.
Prepare Coating
- In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.
Fry Chicken
- Heat vegetable oil in a deep skillet over medium-high heat (about 350°F).
- Remove the chicken from the buttermilk, allowing any excess to drip off, then dredge it in the flour mixture, ensuring it is evenly coated.
- Carefully place the chicken in the hot oil and fry for 5-7 minutes on each side, or until golden brown and cooked through (the internal temperature should reach 165°F).
- Once the chicken is cooked, drain it on paper towels and let it rest for a few minutes.
Prepare Aioli
- While the chicken is frying, prepare the garlic aioli by mixing the mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
Assembly
- To assemble, spread garlic aioli on the bottom half of each brioche bun, add some lettuce, a slice of tomato, and the crispy chicken.
- Top it with the other half of the bun and serve immediately.
